I am at fault.
I know that is difficult to believe, but I am. It is almost 3 months since my last Chef’s blog and I have no excuse. I merely say this. Chef is tired. Chef is knackered. Chef needs a holiday. It has been a sublime season for us and we have been full almost every night and on one night alone we turned away 90 reservations. Very successful but rather tiring as we have opened almost every night in July and August.
The restaurant has gone from strength to strength and we are rated at No 2 out of 9,300 restaurants in the Languedoc-Roussillon on TripAdvisor. Here is the link – https://www.tripadvisor.com/Restaurants-g187149-Languedoc_Roussillon_Occitanie.html
Being a completely uncompetitive person there is no truth in the rumour that I intend to burn down the restaurant in No 1 place.
We wear our heart on our sleeves here and my darling wife Val (who has a LOT to put up with, we Chefs can be damned difficult to live with) has been working all of the summer with a very painful hip. I have a painful foot from all the rushing around in the kitchen and the really bad news is that both of us have problems with our left sides so the sack race is out.
We have had life made a little easier by our two new team members, Naima and Fatima. A niece and aunt combination who work as hard as we do and have been superb in raising the service level. They are also great fun to work with and we thank them very much for their help and hard work through the season.
After service on the evening of Satuday 1st September, we are taking our first holiday in years. For a long time we have worked to build and improve the restaurant and we have not been away for a very long time. Those of you who know me well will know that I am always in a rush. I drive quickly and after a lifetime of doing huge distances every year I am still speeding around. The biggest curse of my life as a driver has been the blasted camping cars that infest our highways and byways. I am the person that flies past them blowing my horn at their snail like progress.
How the mighty are fallen. I am ashamed. We have bought a camping car. There. I have said the awful words. The whole horrible truth is out. We intend to leave next week with our two little dogs and spend up to 2 months touring Italy and Greece. It will be a culinary adventure as we search for inspiration. When we re-open the restaurant, probably around the start of November, we will have a new menu, although some of the favourites will remain.
We have a couple who will live in here while we are away for security but they will not be taking bookings or enquiries so in the meantime if you want to contact us please use email and we will respond when we can.
We were full again tonight for our last night which is pleasing and we look forward to greeting friends old and new when we re-open.

I never drink when I am working (that way lies madness) but we intend to do a great deal of wine tasting while on holiday in order to ensure that the quality is good enough for all our clients when we re-open. I hope that you are impressed with our dedication.
