One of the things which is becoming apparent is the pleasure that we have in having friends old and new come here to eat here. On Saturday evening we had our old friends Linda and Christophe and family, the former owners of the nearby excellent Rebenty Restaurant come for dinner. It was a lovely evening and it was great to see them. They have already booked again for Wednesday evening which is a great compliment as Linda was a superb chef at the Rebenty. To be frank, I was a tad stressed about cooking for them but I was pleased with the food and the evening went with a swing. They are great fun and it was lovely to see my old friend Christophe.
At present we are still doing no advertising to ensure that we get the standards and service right and we are happy to have fairly quiet evenings. Having said that we are fully booked this coming Wednesday (we only hold 20 places). Since some sad rival destroyed our advertising sign on the main road nobody knows that we are here (we know the culprits). We have a big advertising campaign starting in a week, however, and that time we should be rather busier. We just keep smiling which must really annoy them!
Here in the kitchen the menu has been further tweaked and the fillet of beef with Fois gras is very popular indeed and we sold out on Thursday evening. Sourced from the superb Richard Savy in Quillan, our butcher, it is very local beef which has been out in the grassland for all its life and it is delicious stuff. Fast becoming our specialites are the king scallops with black pudding, Blanquette de veau, jumbo prawns flambeed in Cognac and the aforemetioned fillet of beef.
We are working this week to develop our offering of fish as at present we only have the scallops and prawns on the menu. That will hopefully be supplemented with local trout and alsolobster but watch this space for details.
Bon appetit from the happy chef!
